SHG — strictly high grown — coffee from Mexico’s Chiapas region results in a consistent, lightly sweetened cup. We give these beans a medium roast to bring out a little more body to the brew without losing its natural flavor.
As they overcome the many challenges that they have faced over the years from coffee leaf rust to the strain of societal unrest, coffee farmers in the Chiapas region of Mexico tend to and harvest some of the finest crops this side of the equator. This coffee is often grown on family farms nestled in the green-sloped mountains of southern Mexico near the border of Guatemala. In fact, the excellent growing climate puts the quality of Mexico Chiapas coffee on par with Guatemala’s finest Arabica.
