Ethiopia is the birthplace of coffee. Landrace varieties from this origin offer an enormous range of flavor profiles, but it is often difficult to find single-variety lots, which is why we are so excited about this coffee!  

Selected by Jimma Agricultural Research Center in 1974, this coffee, Variety 75158, is known for its crisp fruity sweetness and delicate tea-like body. This lot was treated with particular care; harvest times were restricted to prevent over-fermentation, the coffee was floated to remove underripe cherries then 95% ripe cherry and 5% over-ripe cherry were used to ensure clarity but retain sweetness, and finally, the coffee was gently dried over 28 days to the optimal 12% moisture. 

To preserve these efforts, we have lightly roasted this coffee maintaining its delicate body, notes of sweet lemon and lime which are rounded by a gentle black tea finish. To achieve the tastiest brews, we recommend grinding slightly coarser than normal as this coffee tends to produce a large amount of fines.
